In today’s episode, I wanted to get back in the kitchen and share some of my favorite pantry staples I couldn’t cook without, as well as some of our favorite dinner ideas lately.

My Pantry Staples

  • Triple Filtered Coconut oil (no aroma or taste) 

 

  • Extra Virgin Olive Oil

 

  • Bone broth and chicken stock: Great for soups, homemade sauces, gravy, and great for using a little liquid in a dutch oven meal.

 

  • Flour: I use flour for so many things- one major thing I use it for is to feed my sourdough starter. We make a lot of meals with that starter and I use it for baking quite often too. 

 

  • Spices: Turmeric, Curry, TJ’s (Everything But the Bagel, 21 Seasoning Salute, Paprika, Pink Himalayan Sea Salt, Oregano, Onion + Garlic Powder+ Cumin.

  • Nuts + Seeds: Cashews +peanuts (we like to make Thai quinoa salads and top them with these nuts, sunflower seeds for fresh salads, and hemp hearts chia seeds + pumpkin seeds for homemade granolas and they are great to add-in with smoothies or for homemade granola bars. 

 

  • Ranch Mix. I have an amazing homemade ranch mix recipe. It’s nice to have on hand because all you need to make ranch is milk and a little mayo. I like a fresh homemade ranch for salads, bbq wings, and pizza at least once a week.

 

  • Pasta, Quinoa, and Wild Rice: We make many different meals with these three ingredients whether it’s a creamy pasta dish, a vegan quinoa salad dish, or even a bowl of wild rice and chicken soup. I love how many meals these three ingredients can provide. 

 

  • Honey: We use it to sweeten our smoothies in the morning, or to add to our sourdough English muffin recipe, and our sourdough pancake recipe. 

Sunday 

Quinoa Nachos

This recipe is versatile and the formula to make a great nacho is a grain, meat of choices such as beef, cheese, and toppings like avocado, sour cream, cilantro, and lime. Or a salsa or guac. 

Monday

A Bell Pepper Soup

With Guacamole from the day before + Tortilla Chips: I love this soup because it is loaded with veggies only yet it is so flavorful and filling. You can make it with vegetable broth to make it vegan and leave out the cream, or you can use chicken broth and add in cream for a bit smoother texture. It is one of my all-time favorite soups. I like to add guacamole on top and enjoy it with crushed tortilla chips. 

Tuesday

White Truffle Edamame Dumplings with Rice and Veggies: I love True Food Kitchen. When I am in a city that has a True Food Kitchen I almost always indulge. I especially love their edamame white truffle dumplings. They are easy to make at home. I love how light and healthy this meal is too. A perfect Tuesday meal.

Wednesday

Creamy Sausage + Bowtie Pasta Dish

A family recipe from our cookbook and one that always pleases a crowd. It is simple to make and it contains mild Italian sausage, pasta, tomatoes, garlic, red pepper flakes, cream, and parmesan cheese + broth. 

Thursday

Grilled BBQ chicken, Rice and Veggies

I love using my favorite homemade BBQ sauce in the notes as well. I have so many links for you guys today! Paired with the BBQ chicken, wild rice, and asparagus because it is in season! We have some growing more fervently in our garden now and need to use what’s on hand. 

Friday

DIY Margarita Pizza Night +Salad

We make the best sourdough crust that is so simple to make. I also like to whip up pizza dough from yeast packets if I forget to ferment overnight. The pizza is so easy to make with fresh basil tomatoes, olive oil, and balsamic vinegar!
