We have miles and miles of blackberries that grow behind our house and our greenbelt that runs through our town. Every summer in late July we grab a bucket and go blackberry picking.
I love to see how high we can fill up our buckets. It is a good time with the kids. We love fresh berries for desserts and jams to enjoy during these hotter months. It is also fun to buy berries from our local farmers market!
I am thankful for the wild blackberries growing behind our home because my kids devour them faster than you can blink. Going to the grocery store and buying them constantly gets expensive. Picking them fresh is a great way to save money and it is a fun activity too!
You can make this delicious recipe in any season. I like to use frozen berries if fresh aren’t available. I love that this recipe includes simple ingredients and can be made any time of year.
I love that we have access to fresh berries but no matter what I know we will make this easy recipe any time of the year. Spring, summer, or even in the cold of winter it is a family favorite sweet treat.
TIPS TO MAKE HOMEMADE BLACKBERRY COBBLER
- Ferment the biscuit dough in a large bowl before you go to bed the night before you want to make the cobbler. You could even start fermenting it in the morning if you are making the cobbler for dessert after dinner. Cover and let the dough sit for at least 8 hours.
- Using high-quality butter whether it is grass-fed or local fresh cold butter makes the flavor great.
- Pre-heat your oven when you start to make the berry mixture so it is ready to pop in the oven when you cut out your biscuits.

INGREDIENTS FOR SOURDOUGH BLACKBERRY COBBLER
Blackberry Filling
–Blackberries: Fresh or frozen will work for this recipe
–Honey
–Butter
–All-purpose flour
Cobbler Sourdough Biscuit Ingredients
The night before to ferment
-All-purpose flour
-Fed sourdough starter
-Butter
-Honey
After fermentation add
-Baking powder and Baking soda
– Brown sugar
-Cream
-Cinnamon
-Salt
HOW TO MAKE SOURDOUGH BLACKBERRY COBBLER
The night before or at least 8 hours before serving the blackberry cobbler soak your grains together otherwise known as fermenting your grains. Add 2 cups of flour, 1/2 cup of fed and bubbly sourdough starter, 1/3 cup of melted butter, and 1/4 cup of honey to a medium bowl and cover it with a tea towel.
Once the grains have soaked and the rest of the dessert is ready to be made pre-heat the oven temperature to 350 before starting your blackberry filling. In a large cast iron skillet or pan add in 4 cups of blackberries. Next, add in honey, butter, and all-purpose flour. Place skillet over medium heat until everything is thoroughly incorporated together.
While your berries are simmering on the stove, it is time to tend to the dough that has been fermenting on the counter for the last 8 or so hours. Add to the dough: cream, baking powder, baking soda, brown sugar, salt, and cinnamon. If you want this recipe to contain less sugar simply omit the brown sugar or cut the ingredient amount in half!
Mix the dough with the remaining ingredients well and then on a floured surface cut out the biscuits. I like to use mason jars to cut out the biscuits personally. Then place over the top of the cooked berry mixture. Place in the oven for around 20 minutes or when you see the cobbler biscuits turning to a golden brown color on the top.
Allow the dessert to cool and enjoy with a scoop of vanilla ice cream or even with a dollop of whipped cream!
If you want to try out a different crumble topping that is also delicious see the ingredients below. You can still use the berry mixture but add this oatmeal topping for a different flavor variation.
ANOTHER WAY TO MAKE A YUMMY COBBLER TOPPING
If you are running short on time and can’t make the sourdough biscuit variation, try this delicious variety out! I have been making cobblers with this topping for years. It is truly Devine.
Oat Crumble Ingredients
- Oats
- Butter
- Cinnamon
- Ground nutmeg
- Lemon juice
- Brown sugar
- Flour
Instructions
Mix flour, oats, brown sugar, cinnamon, lemon juice, and ground nutmeg in a small bowl. Cut cold butter over the top of the oat mixture. Pour into simmering berry mixture. Bake in the oven until the berries and oat mixture are simmering together, about 15-20 minutes. Enjoy!
