Instructions
Add all of the dough ingredients into your KitchenAid mixer bowl and start mixing it. Once the ingredients are all incorporated add your dough hook attachment on and work the dough on medium speed for about 5 minutes.
Once the dough is stiff and incorporated, place it in a large glass bowl and cover with a damp tea towel for at least 12-24 hours to ferment and rise.
The next day when you are ready to start making your pretzels, get your water bath ready and boil water in a large pot or dutch oven. Add baking soda and brown sugar to the water and let boil. Cut the dough and roll the dough pieces into a long rope on a floured work surface.Grab each of the ends of the rope and form into a pretzel.
Once the boiling water is ready to go, drop 2-3 pretzels in at a time for about 30 seconds. Use a strainer to get them out.
On a baking sheet lined with parchment paper place your pretzels down and place the egg wash over top. Bake at 425 for 10-15 minutes or until golden brown.
Baste with butter and add salt or cinnamon sugar and enjoy!
