Ingredients

  • 1 cup Soaked + cooked quinoa I like to soak my quinoa at least 30 minutes before cooking it.
  • 3-4 cups Arugula Spinach works well too!
  • 1/4 cup Walnuts
  • 1/4 cup Sunflower Seeds
  • 1/2 Pitted avocado sliced
  • 1 Cup Sliced strawberries
  • 1 Cup Feta Cheese
The Dressing
  • 2 tbsp Balsamic Vinegar
  • 2-3 tbsp Olive oil
  • 2 tsp. Honey

Equipment

  • Large salad bowl
  • Small bowl for the dressing ingredients
  • Medium saucepan for quinoa (small saucepan works fine too)
  • Measuring Cups + Spoons
  • Knife and cutting board to cut avocado and strawberries
  • Colander for draining quinoa

Method

  1. Start by preparing your quinoa. In a medium saucepan placed over medium high heat take one cup of dry quinoa and add it to 2 cups of water. Reduce the heat down to medium low and cook for around 15 minutes. Drain the warm quinoa in a colander.
  2. Add the quinoa to a large bowl and add in the strawberries, avocado and feta cheese. Toss and combine well.
  3. In a small bowl combine olive oil, balsamic vinegar, salt + pepper, and honey and stir well until completely combined.
  4. Combine to the quinoa mixture and top with walnuts + sunflower seeds and enjoy!
